Recipe Corner
Mushroom Risotto
Servings: 3-4
Time: 30 minutes
Ingredients:
1 cup arborio rice
3-4 cups water or broth *
5-6 brown mushrooms
Salt and pepper
Directions:
In a medium pot, bring arborio rice and 2 cups of water to boil for 2-3 minutes.
Turn the heat to medium and stir with a wooden spoon or spatula to prevent sticking.
Add 1/2 cup liquid and continue stirring until the rice absorbs the liquid.
Continue adding one ladle full at a time while stirring continuously. This process takes around 20-25 minutes, depending on desired doneness.
Once the rice is firm tender or to your liking, season with salt and pepper. Remove from heat and serve immediately.
Notes:
*May require more than 3-4 cups water or broth if the rice is still not to your desired doneness.

In Inuktitut
Sources of Strength will be translated into Inuktitut and distributed to students, families, and educators in Nunavut.
Nunavut is home to 24,000 Inuit, over 80% of whom speak Inuktitut.
The 2001 census data shows that the use of Inuktitut, while lower among the young than the elderly, has stopped declining in Canada as a whole and may even be increasing in Nunavut.
Nunavut’s suicide rate remains nearly 9 times the national average.

About the Conference: Youth Mental Health Canada (YMHC) is proud to announce its 2025 National Virtual Conference aimed at addressing chronic school absenteeism in Canada.
Key Issues:
Absentee rates ranging from 20% to 80% in some areas.
Hamilton's absenteeism rate at 54%.
Lack of national public data on student absenteeism.
Quote: "We are walking blindfolded into the future with no understanding of the magnitude of this problem and how to respond to it," said Sheryl Boswell, Executive Director of YMHC. "Our education system is missing too many students, and it's time we took collective action to bring them back."
Conference Goals:
Share data, research, and best practices on addressing chronic absenteeism.
Discuss strategies for universal student support and protocols for early identification and response.
Create a national network to promote school attendance and respond to absenteeism.
