Gluten-Free Coconut Macaroons Recipe
Ingredients
4 egg whites
1/2 cup granulated sugar* (use 1/3 cup if using sweetened coconut)
A dash of salt (around 1/8-1/4 tsp)
1 tsp vanilla extract
4 cups unsweetened coconut, shredded
Directions
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
In a large bowl, combine egg whites, sugar, salt, and vanilla extract.
Use a hand mixer to beat the mixture until thick and frothy, approximately 2-3 minutes.
Fold in the shredded coconut until well combined.
Using a small cookie scoop or two spoons, form the mixture into 1" balls and place them on the prepared baking sheet, spaced about 1-2 inches apart.
Bake for 20-25 minutes, or until the macaroons are golden brown.
Allow to cool and enjoy!
Makes 12 macaroons.
